The Legendary Bartender who Represents the Kyoto Bar Scene. Minoru Nishida 西田 稔

Born in Kyoto on 1964. After graduating from Doshisha University with honors in psychology, Minoru Nishida dedicated himself to the path of bartending after an experience of a part-time job in a bar, and committed himself to becoming a bartender who truly listens to what his patrons have to say.

After being involved in many bar-establishing projects in Tokyo, he returned to Kyoto at the age of 30 and opened Bar K6 where he continued to hone his craft.

Since then, he has established himself as a living legend of the Kyoto bar scene and owns and operates the famous bars Cave de K and Bar Keller.
One of his protégés bartenders Kenji Tsubokura, now independent at Bar Rocking Chair, was crowned winner of the International Bartenders Association’s World Cocktail Championships in 2016, and this achievement reflects the contribution Minoru Nishida continues to make to the world of Japanese bartending.

Minoru Nishida now tends the bar at the famed K36 The Bar & Rooftop which he newly opened in March, 2020. He has been awarded various prestigious titles by the Ordre des Coteaux de Champagne, a Comité Champagne recognized organization, frequently works as a judge for various whisky contests, and makes guests appearances at world-renowned restaurants and events. He continues to contribute greatly to the growth of both the world of cuisine and bartending.
